The Noseto Arai Gyuto is crafted using a 3 layer MD606 Powder Steel core that has been dyed black through a specialised forging and heat treatment process. Each knife begins with raw forging and goes through dozens of precise and carefully controlled steps to ensure exceptional performance. With a core hardness of 60 to 63 HRC and a finely tuned 12 degree water sharpened edge, this knife offers razor sharp cutting, smooth grain, and outstanding durability.
