The Noseto Ryusei Yanagiba 270mm is a premium traditional Japanese sashimi knife crafted for precision slicing. Built through a refined forging and heat-treating process, each knife goes through numerous meticulous steps to ensure exceptional sharpness, balance and smooth cutting performance. The VG10-grade forged steel core reaches 60 +- 2 HRC, providing outstanding edge retention, clean slicing and long-lasting durability. The single bevel edge is hand-sharpened under running water, achieving an extremely sharp mirror finish ideal for sashimi preparation.
Single-Bevel Sashimi Precision
This Yanagiba features a traditional single bevel design with a concave grind on the back side. The concave shaping reduces friction, minimises food sticking and allows the blade to glide effortlessly through fish. Whether slicing sashimi, filleting fish, or creating long draw cuts, the knife produces clean, smooth surfaces without tearing — essential for sushi and Japanese cuisine.
Hand-Crafted Geometry and Balance
The spine gradually tapers toward the tip, improving balance and providing better control during long slicing motions. The rounded spine and heel reduce pressure on the fingers, allowing more comfortable handling during extended use. Each blade is vacuum heat treated and deep frozen to stabilise hardness and improve toughness.
Ebony & Olive Wood Handle
The handle combines natural olive wood, ebony wood and imitation white ox bone, creating a refined and premium aesthetic. Olive wood offers striking grain patterns and solid density, while ebony provides strength and stability. The improved ergonomic shape fits comfortably in the palm, giving better grip and balance during precise slicing tasks.
