Each Noseto Nato knife begins with traditional forging and goes through dozens of carefully controlled processes to ensure exceptional quality. Built with a 67 layer Damascus construction and a precision ground cutting core at 60+2 HRC, the Sujihiki delivers a razor sharp edge with a refined 15 degree wet sharpened bevel.
67 Layer Damascus Construction
The layered Damascus structure provides outstanding toughness, long lasting sharpness and excellent stain resistance. The blade glides cleanly through meat, fish and delicate proteins with no squishing and no tearing. The long and slim geometry is designed for clean, uninterrupted slicing strokes.
Polished Heel and Rounded Spine
Both the spine and heel are polished smooth with rounded corners to reduce pressure on the fingers. The gentle arc transition between the heel and the cutting edge improves comfort and reduces the chance of accidental finger contact during long slicing sessions.
