The Noseto Kurai Kiritsuke 240mm is a powerful, multi-purpose chef’s knife designed for confident slicing and refined presentation work. Sanmai AUS-10 Construction
Forged using Sanmai cladding, this knife features a high-performance AUS-10 high carbon steel core between two softer stainless steel layers. The result is an excellent balance of edge retention, toughness, and stain resistance. The hand-forged surface adds texture and character to every blade.

Efficient for Push Cuts & Long Draws
Its flat cutting edge is ideal for push-cutting through vegetables, proteins, and herbs with minimal rocking, while the extended 240mm length makes it well-suited for slicing larger cuts of meat or preparing fish with accuracy and grace.

Refined Handle Design
The octagonal handle is crafted from premium ebony wood with a buffalo horn ferrule, giving a natural grip that’s durable, water-resistant, and beautifully balanced for extended use.
