This Bunka knife is crafted from a customized 3 layers composite steel developed in collaboration with Japanese Sanyo Riki Co. Ltd. It features a Japanese Aogami No.2 carbon steel core, known for its outstanding sharpness, edge retention and high performance. The core is supported by SUS410 stainless steel on both sides, creating a strong, stable and durable blade suited for high level kitchen use.
Japanese Aogami No.2 Carbon Steel Core
The steel is hardened to 62-64 HRC, giving the blade long lasting sharpness and exceptional cutting performance. The fine water grinding and polishing process produces a razor-sharp edge with a refined satin texture. Every blade shows the beauty of traditional forging combined with precise modern craftsmanship.
Three Layer Composite Steel Construction
The blade is constructed using a layered forging method that bonds the Aogami No.2 core between SUS410 stainless steel. These 3 layered structure increases stability, improves corrosion resistance and maintains a strong cutting core. The quality is supported by material certification and strict manufacturing standards.
Classic Japanese Octagonal Handle
The handle is crafted from white maple wood paired with white buffalo horn, shaped into a traditional octagonal profile. The wooden core structure provides stability while the hand polished surface offers a smooth, comfortable grip. This blend of aesthetics and practicality enhances control and balance.
Comfort Focused Details
